Feliz Cinco de Mayo! After picking up fresh blueberries from Wish Farms this week, I decided to have some Cinco de Mayo fun in the kitchen. Blueberries are one of my favorite fruits and I enjoy them on a regular basis. Some of my favorite dishes are Meyer Lemon Blueberry Pancakes, Blueberry Cobbler and Blueberry BBQ Chicken. I was trying to think of a fun spin on Cinco de Mayo recipes and Blueberry Quesadillas came to mind while I was grocery shopping. I followed my instincts and picked up the ingredients to make this festive dish and I was very impressed with the end result.
Quesadillas de Aràdanos (Blueberry Quesadillas)
*yields 2 servings
- 1 carton of Wish Farms Blueberries
- 2 Large Flour Tortillas
- Queso Fresco
- Crema Mexicana
- 2 fresh jalapeños, diced
- 1 lime
- Cilantro for garnish
Warm a large skillet over medium heat and coat with non-stick cooking spray. Dice jalapeños and set aside. Take two tortillas and place on a clean surface lined with parchment paper or a paper towel. Coat one side of each tortilla with oil or cooking spray and place oil side down. Spread a nice amount of Crema Mexicana all over entire surface of each tortilla. Layer with blueberries and sprinkle with diced jalapeños. Top with shredded Queso Fresco. Fold tortillas in half and place into warm skillet. Once tortillas are nice and golden brown, flip over and repeat process until the other side is golden brown and the cheese is nicely melted. Remove from skillet and slice into triangles. Top with shredded Queso Fresco and garnish with cilantro, a few blueberries and a lime wheel. Serve immediately. Provecho!
These make a great brunch item paired with either a Guava Mimosa or Bloody Mary. I love the combination of the sweet and spicy with the blueberries and jalapeños and the Crema Mexicana blends beautifully with the both flavors. You can also serve these as a fun appetizer and pair them with fresh fruit margaritas.
