I love the spring. As the temperatures warm up and the flowers begin to bloom, everything seems “lighter.” From fashion and accessories to cocktails and cuisine, the heavier tastes of winter give way to the lighter dishes of spring. Seasonal produce is the star of the runway and Carmel Café recently introduced their new collection. I am honored to share their dazzling showcase with you.
Spring Pea Bruschetta:
A beautiful blend of garden peas layered with accents of mint pesto and fresh mozzarella atop toasted ciabatta, Carmel Café’s Spring Pea Bruschetta is a stunning addition to their spring collection. Gorgeous in color, garden peas are one of the hottest items of the season and are very versatile. Mild in flavor, they accentuate the mozzarella and mint for a true taste of spring. Pair with a glass of Segura Viudas Aria Brut Cava and you have the perfect ensemble.
The seductive pairing of escabeche-style cod with citrus zataar marinade, capers, tomatoes and olives on toasted ciabatta is not only beautifully put together, the taste is phenomenal. The sweet citrus marinade and juicy tomatoes mixed with the saltiness of the capers and olives yields a savory flavor combination that is like a symphony for the taste buds. Known for their fabulous, seasonal flatbreads, Carmel Café has done it again with another captivating creation. Crispy flatbread topped with shrimp, red peppers, kalamata olives, tomato, English cucumber, Fontina, feta and fresh pea shoots, this is a the perfect taste of spring. The beautiful array of colors will entice your eyes and the flavors will delight your palate.
Nothing is better than fresh ravioli and Carmel Café’s Ravioli Verde steals the show. Luscious little pillows of heaven stuffed with spinach and Ricotta and topped with fresh peas, portabella mushrooms, haricot verts and pea shoots and then topped with shaved Parmesan and truffle-infused beurre blanc, the Ravioli Verde is like the supermodel of the spring menu collection. The combination of savory ravioli and rich truffle flavor beautifully blends with the portabella mushrooms and haricot verts and leaves you wanting more. Enjoy this with a glass of Vega Sindoa Chardonnay from Spain. With hints of pear and citrus, this creamy Chardonnay pairs nicely with the distinct flavors of this dish.
Grilled Mahi Mahi:
Few things can compare to fresh fish and this locally sourced Mahi Mahi is fantastic. Topped with blood orange-infused cherries, toasted California almonds, balsamic glaze and served with season haricot verts, this dish is an incredible blend of exotic flavors. The blood orange-infused cherries yield a beautiful sweet and sour tang that brings out the flavor of the mild fish. For the ultimate experience, enjoy this with a glass of Acrobat King Estate Pinot Noir from Oregon. With hints of strawberry and cocoa, this wine complements the bold flavors of the Mahi Mahi.
Chicken is one of the most versatile items and can be prepared in many different ways. Carmel Café presents us with Tunisian Chicken which is roasted and grilled, then glazed with a special blend of 14 spices. The scent alone will drive you into a frenzy and the spices will delight your palate. The Sledgehammer Zinfandel from Lake County is big and bold with nice spice and is the perfect wine for the Tunisian Chicken.
